It's a large-volume prepared mix that is bursting full of essence of the festive period, making it ideal for a holiday party. Bikini Recipe
Makes enough for 10 servings
To make the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Put all the items into a saucepan, bring to a light boil, agitating to dissolve. Next, take off the burner allowing it to cool down entirely. Transfer into an sterilised bottle, close it and refrigerate it chilled, it can be stored for about a month.
Preparing the Premix: Mix every liquids into a large bottle, allow it to infuse for 60 minutes, then strain preferably using a fine cloth, making it fully clarified.
To serve: Add 85ml of your cocktail base into your mixing glass containing ice, and agitate lightly for about 60 seconds to chill. Strain into an cold coupe glass or a similar vessel, top with a few cranberries and complete it using a light spray of the essential oil over the top.
